I was wanting some pumpkin pancakes and ran across this healthier version you make in the blender and had to give a try! Make sure you check my notes at the end to see how I changed the recipe a little.
Blender Pumpkin Spice Pancakes
(recipe from www.fitnessista.com)
½ cup oats
2 T pumpkin
½ t pumpkin spice
1 t vanilla
Add all ingredients to a blender, blend until smooth and mixed well. Pour out and cook like typical pancakes!
I’ve made this twice now, and the first time I went exactly like the recipe. Second time, however, I made a few changes:
I used ½ a banana because the banana flavor was pretty strong.
I added about 4 T of ground flaxseed for a nutty flavor
I doubled the pumpkin amount. The first time, there wasn’t enough pumpkin taste for me.
I also doubled the pumpkin spice amount and added an extra sprinkle of cinnamon too.
These pancakes aren’t light and fluffy like regular ones. Instead, they’re pretty dense. They’re super yummy and a healthier way of indulging this season! Enjoy!!
