
I'm all about a good breakfast! It just sets the right tone for your morning. If I can cook a quick, filling breakfast, it puts me on course for good choices the rest of the day.
Sunny Tater Hash
(an easy, yummy, and spicy morning breakfast)
Ingredients:
2 eggs
1 sweet potato (cut into small cubes)
1 yellow onion, minced
1 green pepper seeded and thinly sliced
1 jalapeño minced (if you like spicy)
Garlic salt to taste
1. Spray a medium skillet with olive oil cooking spray or coat with olive oil. Start with Med-high heat.
2. Add sweet potato, onion, green pepper, and jalapeño. Cook until onions are translucent and sweet potatoes are slightly crispy. Add garlic salt to your liking.
3. Set aside. Crack two eggs in over the remnants in the pan(unless that grosses you out), cook them the way you like. I do mine sunny side up, hence the name sunny tater hash. Serve eggs over the hash.
