I love easy recipes. I enjoy complicated and detailed baking projects but when it comes to cooking a meal, I like for it to be pretty simple and fast. My husband frequently goes for a run after work which means I am cooking dinner - alone. During the time I'm trying to make dinner my youngest is pulling snacks from the pantry, dumping out dog treats, and filling up any cup he can find with water from the refrigerator. So I need something healthy that is also quick.
This is a recipe we make a few times a month in our house because we love Mexican and I usually have all these ingredients on hand. And it's fast!
Healthy Tacos
1 lb ground turkey
1/4-1/2 onion, finely chopped
1/2 jalapeno ribbed and seeded, minced
8 oz can tomato sauce
2 Tbsp fresh cilantro, minced
1 Tbsp ground cumin
1 tsp garlic powder
1 tsp chipotle chili powder
juice of 1 lime
salt & pepper
tortillas or taco shells
taco toppings like lettuce, cheese, & avocado
1. Brown ground turkey in a large skillet. Add onion and jalapeno and saute a few minutes or until tender. Add tomato sauce, cilantro, cumin garlic powder, chili powder and lime juice. Season with salt and pepper to taste.
2. Simmer for 5-10 minutes. If the mixture starts to look too dry, add 1-2 Tbsp of water and stir to combine.
3. Serve in tortillas or taco shells and top with lettuce, cheese, and avocado. Add some black beans and rice to round out the meal.
*A tip to having these ingredients on hand? Keep ground turkey frozen in 1 lb batch in the freezer so you can thaw that morning in the fridge or quick thaw it in cold water in the sink. Keep dried cilantro in your spice cabinet and use it in place of fresh. Don't have a lime? A drop or two of lime essential oil gives it the same flavor. If you have everything but the tortillas on hand it also makes great nachos or taco salad.
