I've been making this Strawberry Bread for years. It's strawberry season, so I thought I'd share it with you! I like it warmed and served with some yogurt on top and fresh berries!!
1/4 cup oil
1/4 cup vanilla yogurt
2 tsp vanilla extract
1.5 cups flour
2/3 cup sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1.5 cups fresh diced strawberries
1. Preheat oven to 350 and grease an 8x4 loaf pan.
2. Whisk together the flour, sugar, baking soda, salt, cinnamon and baking powder in large bowl.
3. In a separate bowl, beat the eggs until evenly yellow (but not frothy). Stir in yogurt, oil and vanilla and stir until evenly mixed. Pour into the dry ingredients and mix until there are no longer traces of flour.
4. Gently fold in the strawberries, then pour into prepared pan. Bake for 40 minutes. Cool for 10 minutes before slicing. 🍓🍓🍓🍓
