
Here's a quick and super easy recipe for Veggie Soup!
1 bag of frozen assorted veggies
1 chopped potato
3-4 cups tomato juice (I use low sodium V8)
2 cups chicken broth
1 cup water
3 tsp garlic powder
1 tbsp chili powder
1 can pinto beans
Onion powder to taste
Pepper to taste
Add all ingredients to large pot. Bring soup to a boil. Cover and reduce heat to low. Simmer for 1.5-2 hours, stirring occasionally.
Feel free to add a can of tomatoes, any other veggie of choice, or elbow pasta!
